Chaz Restaurant and Lounge, the signature restaurant of The Raphael Hotel, is pleased to introduce new Executive Chef David Spiven and his new menus, sure to make your tastebuds dance at Kansas City's unique, intimate dining and jazz music lounge, Chaz on The Plaza. The use of acids, especially vinegar, is his trademark. Two of Chef Spiven's favorite dishes introduced on Chaz's new Spring menu are his chicken and lamb. “These two dishes very much encompass who I am on a plate. The chicken dish looks simple but is full of flavor and well composed,” he said. “The lamb entrée is heavily inspired by the flavors of the Middle East.” Pan Roasted Chicken: Airline chicken breast with peas, fingerling potatoes, mint, green onions and pickled shaved carrots. New Zealand Lamb Chops: Rubbed in harissa and honey and served alongside savory quinoa, pickled golden raisins, almonds, spinach and curry butter. Other highlights from Chaz's Dinner Menu include: The Duke Wellington: Braised Kobe beef short rib, charred red pepper, caramelized onion, brie, spinach, puff pastry, grilled asparagus, leek, and Boursin mashed potatoes. Garden Quinoa: Savory quinoa, watermelon radish, asparagus, roasted portabella, avocado, arugula, citrus vinaigrette. Some of Chaz's elevated lunch dishes: Prosciutto Deviled Eggs: Crispy prosciutto, pomegranate glaze. Chaz Lobster Bisque: Rich pureed bisque of lobster, cream, tomato, sherry. Apple Manchego Salad: Greens, red and green apples, shaved Manchego cheese, lemon shallot vinaigrette. Salmon Burger: Grilled steakburger, aged cheddar, tomato and onion marmalade, butter lettuce, egg bun. Sunday Brunch features include: Kansas City Brisket & Eggs: 12-Hour smoked American Kobe beef brisket, smoked demi, two eggs, smoked heirloom tomato, Chaz potato cake, toast. Strawberry Rhubarb Oatmeal: Milk and brown-sugar-infused steel-cut oats, strawberry rhubarb compote. Citrus & Goat Cheese Salad: Butter lettuce, poached citrus, pepitas, goat cheese, pickled red onion, lemon vinaigrette. Grilled Chicken 'BLT': Grilled chicken breast, tomato, arugula, bacon jam, toasted Farm to Market wheat bread. Happy Hour at Chaz: Chaz Chips: Housemade potato chips, herbs, dill and chive Chaz ranch. Creole Shrimp Cocktail: Cajun-spiced Argentinian red shrimp, Bloody Mary cocktail sauce. Kansas City Mac & Cheese: Wisconsin cheddar, aged gouda, aged parmesan, cavatappi, smoked tomatoes, scallions. Chaz Burger: Grilled 8 oz. steakburger, aged cheddar, tomato and onion marmalade, butter lettuce, egg bun. Chef Spiven's journey is truly one from the ground up that started at age 15 in the kitchen of a local Italian restaurant as a dish washer, trying his hand at cooking when the restaurant was slow. After being bitten by the culinary bug, the young Chef-in-Training was determined to learn everything he could about creating unique dishes. From working in a BBQ restaurant in college, to making sandwiches in his father's coffee shop, or cooking at a Pakistani restaurant and creating dishes for multiple hotels and country clubs, Chef Spiven's culinary talent is shaped by many different experiences. He is also a foodie who gets inspiration from cuisine he has eaten recently, as well as spending time doing research through his love of reading cookbooks.
