Each month features a single, unique ingredient at the center of specially created dishes by Executive Chef David Spiven. Chaz's Certified Sommelier, Jordan Carver, pairs an exceptional Wine of the Month to complement the carefully composed plates. The October featured ingredient is Prince Edward Island Mussels – known for their jet-black shells and sweet flavor! Chef David has developed delightful recipes to enjoy the Mussels that pair well with crispy bread and a glass (or bottle) of wine. The Wine of the Month is Louis Jadot Chablis, a bright, crisp and concentrated wine with citrus and stony nuances and an elegant dry finish with subtle complexity. With notes of honey and orange oil to lift and warm its stony acidity, the Jadot Chablis has a clean and savory limestone essence of chardonnay.
