The Raphael Hotel’s signature restaurant, Chaz Restaurant & Lounge, is excited to announce October’s feature ingredient and wine for the extremely popular rotating menu, Pours & Plates. Each month features a single, unique ingredient at the center of specially created dishes by Executive Chef David Spiven. Chaz’s Certified Sommelier, Jordan Carver, pairs an exceptional Wine of the Month to compliment the carefully composed plates.
The October featured ingredient is Cedar River Flank Steak. This high-quality, natural beef is sourced from cattle born and raised in the Southwestern United States. The cattle are fed a 100% vegetarian diet of grain and forage, with no added hormones, resulting in beef that is known for its superior tenderness, flavor, and abundant marbling. With a commitment to consistent quality, Cedar River Farms produces a truly exceptional and flavorful beef.
The Wine of the Month is Red Schooner Malbec by Caymus. The grapes for this Malbec are grown in the Andes Mountains of Argentina, then chilled and transported by ocean voyage to Caymus, where they create a style that is dense, dark, and supple. This robust and flavorful wine is an excellent pairing for the richness of the featured flank steak.
