The Raphael Hotel’s signature restaurant, Chaz Restaurant & Lounge, is excited to announce June’s feature ingredient and wine for the extremely popular rotating menu, Pours & Plates. Each month features a single, unique ingredient at the center of specially created dishes by Executive Chef David Spiven. Chaz’s Certified Sommelier, Jordan Carver, pairs an exceptional Wine of the Month to compliment the carefully composed plates.
The June featured ingredient is Duroc Pork. Known for its excellent marbling, rich flavor and juiciness, Duroc pigs are a favorite among chefs, because they are specifically bred to have a higher percentage of lean muscle with the perfect amount of marbling to make it tasty and tender.
The Wine of the Month is Jonata Todos Red from Ballard Canyon in the Santa Ynez Valley of California. A big, gorgeous and full-bodied wine from Kansas City native Matt Dees. It is composed of Syrah, Cabernet Sauvignon, Cabernet Franc and Petit Verdot. This robust pour is a great compliment to the richness of Duroc Pork.
