The Raphael Hotel’s signature restaurant, Chaz Restaurant & Lounge, is excited to announce June’s feature ingredient and wine for the extremely popular rotating menu, Pours & Plates. Each month features a single, unique ingredient at the center of specially created dishes by Executive Chef David Spiven. Chaz’s Certified Sommelier, Jordan Carver, pairs an exceptional Wine of the Month to compliment the carefully composed plates.
The July featured ingredient is Heirloom Tomatoes. Known for variety of colors and intense flavors, heirloom tomatoes are best in mid-to-late summer. The flavor profiles can range from sweet to savory and in some cases, smoky. Heirloom tomatoes are open-pollinated by wind, birds insects or other natural processes. The seeds are saved for years, even centuries, to pass on the tomato’s unique characteristics.
The Wine of the Month is Orlana Vinho Verde from Vinho Verde, Portugal. The majority of Vinho Verde wine is white. A very fresh wine from the northern coast or Portugal. Its crisp taste pairs perfectly with the rich flavor of Heirloom tomatoes.
