The Raphael Hotel’s signature restaurant, Chaz Restaurant & Lounge, is excited to announce September’s feature ingredient and wine for the extremely popular rotating menu, Pours & Plates. Each month features a single, unique ingredient at the center of specially created dishes by Executive Chef David Spiven. Chaz’s Certified Sommelier, Jordan Carver, pairs an exceptional Wine of the Month to compliment the carefully composed plates.
The September featured ingredient is Missouri Peaches. These gems are grown in three key places across the state, southeast, southwest and north-central Missouri, with the most concentrated peach production in the Bootheel region, along Crowley’s Ridge. Missouri peach farmers grow a wide variety of peaches that are mainly sold fresh, in the state, and are heralded by some as the best in the world.
The Wine of the Month is Saldo Chenin Blanc from California. Fermented in stainless steel tanks, it offers bright acidity and rich fruit flavors. Saldo Chenin Blanc is a perfect pairing for this month’s special ingredient, with its aromas and flavors of white peach, pineapple, brown spice and Honeycrisp apple.
